Dum Chatpata Mushroom Masala

Ingredients
- 500 g button mushrooms, cleaned and halved
- 3 tbsp mustard oil or neutral cooking oil
- 2 medium red onions (about 250 g), finely chopped
- 3 medium tomatoes (about 300 g), finely chopped
- 1 tbsp fresh ginger, grated
- 5 garlic cloves, crushed
- 2 dried red chillies
- 1 tsp salt, or to taste
- 120 ml hot water
- 2 tbsp fresh coriander leaves, chopped
- 14–16 g Dum Chatpata Meat Masala
- ½ tsp Turmeric Powder
- 1 tsp Kashmiri Lal Mirch
- 1 tsp Whole Cumin Seeds
Instructions
- 1Heat 1½ tbsp oil in a wide pan. Add the mushrooms and cook over high heat for 5–7 minutes until lightly browned. Remove and keep aside.
- 1Add the remaining oil, Ember Crest Whole Cumin Seeds and dried red chillies. Let them become aromatic.
- 2Add the onions and cook until golden. Add the ginger and garlic and cook for 1 minute.
- 3Add the tomatoes, Ember Crest Turmeric Powder, Ember Crest Kashmiri Lal Mirch and half the salt. Bhuno until the tomato moisture reduces.
- 4Mix Ember Crest Dum Chatpata Meat Masala with 3 tbsp water. Add and bhuno for 1–2 minutes on low heat.
- 5Return the mushrooms and toss for 2–3 minutes.
- 6Add 120 ml hot water and the remaining salt. Cover and simmer for 5–7 minutes.
- 7Finish with fresh coriander and serve hot.
Recipe notes
Mushrooms are cooked over high heat first so they brown rather than steam. They are then simmered briefly in a concentrated onion-tomato masala seasoned with Dum Chatpata Meat Masala and Ember Crest cooking spices. The result is glossy, savoury and suitable for roti or rice.
