Ingredients

  • 500 g button mushrooms, wiped clean and halved
  • 120 g onion, thinly sliced
  • 15 g ginger-garlic paste
  • 3.5 g salt, then adjust to taste
  • 30 ml mustard oil or neutral cooking oil
  • 1 tbsp lemon juice
  • 2 tbsp chopped fresh coriander
  • 15 ml water
  • 8.5 g Bharwa Achari Masala

Instructions

  1. 1Heat the oil in a wide pan and cook the onion until lightly golden.
  2. 1Add ginger-garlic paste and cook for one minute.
  3. 2Add the mushrooms and cook uncovered over high heat until their released moisture has nearly evaporated.
  4. 3Mix Bharwa Achari Masala and salt with the water, lower the heat and add it to the mushrooms.
  5. 4Toss for two to three minutes until the masala clings and the dish is dry.
  6. 5Finish with lemon juice and coriander, taste, adjust the salt only if required and serve hot.

Recipe notes

Cook uncovered over high heat so the mushroom moisture evaporates and the finished bhaji stays dry. Bharwa Achari Masala contributes regular salt and black salt; use the measured seasoning salt below, then adjust only after tasting near the end of cooking.
