Dum Chatpata Aloo Handi Curry

Ingredients
- 700 g baby potatoes, scrubbed clean
- 3 tbsp mustard oil or neutral cooking oil
- 2 medium red onions (about 250 g), finely chopped
- 3 medium tomatoes (about 300 g), pureed
- 1 tbsp ginger-garlic paste
- 2 green chillies, slit
- 2 dried red chillies
- 1¼ tsp salt, or to taste
- 300 ml hot water
- 2 tbsp fresh coriander leaves, chopped
- 17–19 g Dum Chatpata Meat Masala
- ½ tsp Turmeric Powder
- 1 tsp Kashmiri Lal Mirch
- 1 tsp Whole Cumin Seeds
Instructions
- 1Boil the baby potatoes for 8–10 minutes until partly tender. Drain, cool and prick each potato once or twice.
- 1Heat 1½ tbsp oil and brown the potatoes for 6–8 minutes. Remove and keep aside.
- 2Add the remaining oil, Ember Crest Whole Cumin Seeds and dried red chillies.
- 3Add the onions and cook until deep golden. Add the ginger-garlic paste and green chillies and cook for 1 minute.
- 4Add tomato puree, Ember Crest Turmeric Powder, Ember Crest Kashmiri Lal Mirch and half the salt. Bhuno until glossy.
- 5Mix Ember Crest Dum Chatpata Meat Masala with 4 tbsp water. Add and bhuno on low heat for 1–2 minutes.
- 6Add the potatoes and toss for 3–4 minutes.
- 7Add 300 ml hot water and the remaining salt. Cover and simmer for 12–15 minutes.
- 8Cook covered on the lowest heat for another 5 minutes, rest briefly and finish with coriander.
Recipe notes
Baby potatoes are par-cooked and browned before being simmered in a deep onion-tomato gravy. The masala is bhunoed thoroughly and the final covered cook allows the potatoes to absorb the roasted spice flavour without breaking apart.
