Ingredients
- 600 g potatoes, boiled until just tender and cut into cubes
- 30 ml mustard oil or neutral cooking oil
- 10 g fresh ginger, cut into fine juliennes
- 1 green chilli, slit (optional)
- 3.5 g salt, then adjust to taste
- 1 tbsp lemon juice
- 2 tbsp chopped fresh coriander
- 30 ml water
- 8.5 g Bharwa Achari Masala
Instructions
- 1Heat the oil in a wide pan and add the potatoes in one layer.
- 1Cook uncovered over medium heat for eight to ten minutes, turning occasionally, until the edges are golden.
- 2Add ginger and optional green chilli and fry for one minute.
- 3Mix Bharwa Achari Masala and salt with the water, lower the heat and pour it over the potatoes.
- 4Toss for two to three minutes until the moisture evaporates and the masala coats every piece.
- 5Turn off the heat, add lemon juice and coriander, taste, adjust the salt only if required and serve hot.
Recipe notes
This is a quick dry fry-bhaji and works best with potatoes boiled only until just tender. Bharwa Achari Masala contributes regular salt and black salt; use the measured seasoning salt below, then adjust only after tasting near the end of cooking.
