Ingredients

  • 600 g potatoes, boiled until just tender and cut into cubes
  • 30 ml mustard oil or neutral cooking oil
  • 10 g fresh ginger, cut into fine juliennes
  • 1 green chilli, slit (optional)
  • 3.5 g salt, then adjust to taste
  • 1 tbsp lemon juice
  • 2 tbsp chopped fresh coriander
  • 30 ml water
  • 8.5 g Bharwa Achari Masala

Instructions

  1. 1Heat the oil in a wide pan and add the potatoes in one layer.
  2. 1Cook uncovered over medium heat for eight to ten minutes, turning occasionally, until the edges are golden.
  3. 2Add ginger and optional green chilli and fry for one minute.
  4. 3Mix Bharwa Achari Masala and salt with the water, lower the heat and pour it over the potatoes.
  5. 4Toss for two to three minutes until the moisture evaporates and the masala coats every piece.
  6. 5Turn off the heat, add lemon juice and coriander, taste, adjust the salt only if required and serve hot.

Recipe notes

This is a quick dry fry-bhaji and works best with potatoes boiled only until just tender. Bharwa Achari Masala contributes regular salt and black salt; use the measured seasoning salt below, then adjust only after tasting near the end of cooking.
