Ingredients

  • 500 g paneer, cut into 3 cm cubes
  • 2½ tbsp mustard oil or neutral cooking oil
  • 2 medium red onions (about 250 g), finely chopped
  • 3 medium tomatoes (about 300 g), pureed
  • 1 tbsp fresh ginger, grated
  • 5 garlic cloves, crushed
  • 2 green chillies, slit
  • 2 dried red chillies
  • 1 tsp salt, or to taste
  • 150 ml hot water
  • 2 tbsp fresh coriander leaves, chopped
  • 13–15 g Dum Chatpata Meat Masala
  • ½ tsp Turmeric Powder
  • 1 tsp Whole Cumin Seeds

Instructions

  1. 1Heat 1 tbsp oil in a heavy pan and lightly sear the paneer cubes for 2–3 minutes. Remove before they become firm.
  2. 1Add the remaining oil. Add Ember Crest Whole Cumin Seeds and the dried red chillies; temper until aromatic.
  3. 2Add the onions and cook until golden. Add the ginger, garlic and green chillies and cook for 1 minute.
  4. 3Add the tomato puree, Ember Crest Turmeric Powder and half the salt. Bhuno for 7–9 minutes until glossy.
  5. 4Mix Ember Crest Dum Chatpata Meat Masala with 3 tbsp water, add it to the pan and bhuno on low heat for 1–2 minutes.
  6. 5Add 150 ml hot water and simmer for 3–4 minutes to form a thick gravy.
  7. 6Add the paneer and remaining salt. Fold gently, cover and cook on the lowest heat for 4–5 minutes.
  8. 7Rest covered for 5 minutes, garnish with coriander and serve immediately.

Recipe notes

Paneer is lightly seared and folded into a well-bhunoed tomato-onion base. Dum Chatpata Meat Masala gives the dish roasted spice depth, black-pepper warmth and tang, while turmeric and cumin keep the flavour grounded in a familiar North Indian curry profile.
