Paneer Curry Masala Mixed Vegetable Gravy

Ingredients
- 500 g mixed vegetables such as cauliflower, carrot, peas, beans and potato
- 160 g onion, finely chopped
- 220 g tomato, pureed
- 15 g ginger-garlic paste
- 30 ml cooking oil
- 120 ml lukewarm water, for the premix paste
- 180-250 ml hot water
- 4 g salt, then adjust to taste
- 2 tbsp chopped fresh coriander
- 40 g Paneer Curry Masala
Instructions
- 1Whisk Paneer Curry Masala with lukewarm water until smooth and rest for five minutes.
- 1Heat the oil and cook the onion until golden.
- 2Add ginger-garlic paste and tomato; bhuno until glossy.
- 3Add the vegetables, salt and a splash of hot water; cover and cook until nearly tender.
- 4Lower the heat and stir in the premix paste. Add enough hot water for a thick gravy and simmer gently for six minutes.
- 5Adjust salt, garnish with coriander and serve with naan or rice.
Recipe notes
Use firm vegetables and cook them before adding the premix paste so the dairy and nut-rich gravy does not overcook.
