Kathal Pickle Paratha Roll

Ingredients
- 4 cooked whole-wheat parathas or rotis
- 200 g paneer, cut into thin strips
- 80 g onion, thinly sliced
- 80 g capsicum, thinly sliced
- 15 ml cooking oil
- 1 pinch salt
- 60 g plain curd
- 1 tbsp chopped fresh coriander
- 60 g Jackfruit Pickle (Kathal)
Instructions
- 1Chop the Jackfruit (Kathal) Pickle pieces into small bite-sized bits.
- 1Heat oil and sauté onion and capsicum for two minutes.
- 2Add paneer and a pinch of salt and cook until lightly golden.
- 3Turn off the heat and fold in the chopped pickle.
- 4Spread curd on each paratha, add the filling and coriander, then roll tightly.
- 5Serve immediately.
Recipe notes
Drain excess surface oil before chopping the pickle so the roll stays neat.
