Ingredients

  • 300 g whole-wheat flour
  • 180-200 ml water, as needed
  • 1/2 tsp salt for the dough
  • 350 g boiled potatoes, mashed
  • 2 tbsp chopped fresh coriander
  • 40-50 ml ghee or oil for cooking
  • 70 g Mango Pickle

Instructions

  1. 1Knead flour, salt and water into a soft dough; rest for fifteen minutes.
  2. 1Finely chop the Mango Pickle pieces and mix them with mashed potato and coriander.
  3. 2Divide the dough and filling into eight portions.
  4. 3Fill and seal each dough portion, then roll gently into a paratha.
  5. 4Cook on a hot tawa with ghee or oil until golden on both sides.
  6. 5Serve hot with plain curd.

Recipe notes

Chop the mango pieces very finely and drain excess surface oil to make the filling easy to seal.
