Mango Pickle Paratha

Ingredients
- 300 g whole-wheat flour
- 180-200 ml water, as needed
- 1/2 tsp salt for the dough
- 350 g boiled potatoes, mashed
- 2 tbsp chopped fresh coriander
- 40-50 ml ghee or oil for cooking
- 70 g Mango Pickle
Instructions
- 1Knead flour, salt and water into a soft dough; rest for fifteen minutes.
- 1Finely chop the Mango Pickle pieces and mix them with mashed potato and coriander.
- 2Divide the dough and filling into eight portions.
- 3Fill and seal each dough portion, then roll gently into a paratha.
- 4Cook on a hot tawa with ghee or oil until golden on both sides.
- 5Serve hot with plain curd.
Recipe notes
Chop the mango pieces very finely and drain excess surface oil to make the filling easy to seal.
