Dum-Chatpata Bhuna Mutton

Mutton cooked with minimal water until the masala clings to every piece.

Ingredients

  • 750 g mutton, curry-cut
  • 120 g plain curd
  • 300 g onion, finely sliced
  • 180 g tomato, chopped
  • 25 g ginger-garlic paste
  • 60 ml mustard oil or cooking oil
  • 8 g salt, or to taste
  • 150-250 ml hot water
  • 1 green chilli, slit (optional)
  • 2 tbsp chopped fresh coriander
  • 28 g Dum Chatpata Meat Masala

Instructions

  1. 1Marinate the mutton with curd, 15 g Dum Chatpata Meat Masala and half the salt for forty-five minutes.
  2. 1Heat the oil and cook the onions until deep golden.
  3. 2Add ginger-garlic paste and tomato; bhuno until the mixture is concentrated.
  4. 3Add the remaining masala and marinated meat. Bhuno over medium heat for ten minutes.
  5. 4Add only enough hot water to tenderise the meat. Pressure-cook or simmer covered until tender.
  6. 5Cook uncovered, stirring often, until the gravy reduces to a thick coating. Garnish and serve.

Recipe notes

A concentrated bhuna preparation. Cook slowly after tenderising so the onion-tomato base reduces without scorching.
