  • 250 g onion, thinly sliced
  • 200 g tomato, pureed
  • 20 g ginger-garlic paste

  • 150-220 ml hot water
  • 2 tbsp chopped fresh coriander
  • 20 g Dum Chatpata Meat Masala

Instructions

  1. 1Mix the chicken with curd, 10 g Dum Chatpata Meat Masala and half the salt; rest for twenty minutes.
  2. 1Heat the oil and brown the onions evenly.
  3. 2Add ginger-garlic paste, then tomato and remaining salt; cook until thick and glossy.
  4. 3Add the remaining masala with a splash of water and bhuno for one minute.
  5. 4Add the chicken and cook uncovered for eight minutes. Add hot water, cover and simmer until the chicken is cooked through.
  6. 5Reduce the gravy if needed, rest for five minutes and garnish with coriander.

Recipe notes

Bone-in chicken gives the best flavour, but boneless thigh can be used with a shorter cooking time.
