Dum-Chatpata Chicken Curry
A deeply roasted chicken curry with bright chilli colour, smoky whole-spice notes and a tangy finish.

Ingredients
- 800 g bone-in chicken
- 100 g plain curd, whisked
- 250 g onion, thinly sliced
- 200 g tomato, pureed
- 20 g ginger-garlic paste
- 45 ml cooking oil
- 7 g salt, or to taste
- 150-220 ml hot water
- 2 tbsp chopped fresh coriander
- 20 g Dum Chatpata Meat Masala
Instructions
- 1Mix the chicken with curd, 10 g Dum Chatpata Meat Masala and half the salt; rest for twenty minutes.
- 1Heat the oil and brown the onions evenly.
- 2Add ginger-garlic paste, then tomato and remaining salt; cook until thick and glossy.
- 3Add the remaining masala with a splash of water and bhuno for one minute.
- 4Add the chicken and cook uncovered for eight minutes. Add hot water, cover and simmer until the chicken is cooked through.
- 5Reduce the gravy if needed, rest for five minutes and garnish with coriander.
Recipe notes
Bone-in chicken gives the best flavour, but boneless thigh can be used with a shorter cooking time.
