Achari Bhindi Fry

Ingredients
- 600 g tender okra, washed, completely dried and cut into 5 cm pieces
- 20 g gram flour (besan)
- 4 g salt, then adjust to taste
- 30 ml mustard oil or neutral cooking oil
- 1 tbsp lemon juice
- 2 tbsp chopped fresh coriander
- 9 g Bharwa Achari Masala
Instructions
- 1Heat the oil in a wide pan and add the dry okra.
- 1Cook uncovered over medium heat for twelve to fifteen minutes, stirring only occasionally, until nearly tender.
- 2Lower the heat and sprinkle in gram flour, Bharwa Achari Masala and salt.
- 3Toss gently and cook for four to five minutes until the besan is cooked and the okra is lightly crisp.
- 4Turn off the heat and mix in lemon juice and coriander.
- 5Taste, adjust the salt only if required and serve with roti or dal-rice.
Recipe notes
Wash the okra in advance and dry it completely; moisture causes sliminess and prevents crisp frying. Bharwa Achari Masala contributes regular salt and black salt; use the measured seasoning salt below, then adjust only after tasting near the end of cooking.
