Ingredients

  • 500 g small tender okra, washed and completely dried
  • 30 g roasted gram flour (besan)
  • 30 ml mustard oil or neutral cooking oil
  • 5 g salt, or to taste
  • 1 tsp lemon juice
  • 2 tbsp chopped fresh coriander
  • 18 g Bharwa Achari Masala

Instructions

  1. 1Trim the okra and make a lengthwise slit without cutting each pod into two pieces.
  2. 1Mix the gram flour, salt and Bharwa Achari Masala. Add one tablespoon oil and enough lemon juice to make a crumbly filling.
  3. 2Fill a small amount of the mixture into each okra pod.
  4. 3Heat the remaining oil in a wide pan. Arrange the stuffed okra in one layer, cover and cook on low heat for eight minutes.
  5. 4Uncover, turn gently and cook for another twelve to fifteen minutes until tender and lightly crisp.
  6. 5Finish with fresh coriander and serve with roti or dal-rice.

Recipe notes

A dry North Indian-style stuffed bhindi recipe for four servings. Drying the okra well before filling prevents sliminess.
