Ingredients
- 500 g small tender okra, washed and completely dried
- 30 g roasted gram flour (besan)
- 30 ml mustard oil or neutral cooking oil
- 5 g salt, or to taste
- 1 tsp lemon juice
- 2 tbsp chopped fresh coriander
- 18 g Bharwa Achari Masala
Instructions
- 1Trim the okra and make a lengthwise slit without cutting each pod into two pieces.
- 1Mix the gram flour, salt and Bharwa Achari Masala. Add one tablespoon oil and enough lemon juice to make a crumbly filling.
- 2Fill a small amount of the mixture into each okra pod.
- 3Heat the remaining oil in a wide pan. Arrange the stuffed okra in one layer, cover and cook on low heat for eight minutes.
- 4Uncover, turn gently and cook for another twelve to fifteen minutes until tender and lightly crisp.
- 5Finish with fresh coriander and serve with roti or dal-rice.
Recipe notes
A dry North Indian-style stuffed bhindi recipe for four servings. Drying the okra well before filling prevents sliminess.
