Ingredients
- 16-18 small onions or large shallots, about 500 g, peeled
- 70 g gram flour (besan), dry-roasted
- 40 g roasted peanuts, coarsely ground
- 4.5 g salt, then adjust to taste
- 35 ml mustard oil or neutral cooking oil, divided
- 1 tbsp lemon juice
- 2 tbsp chopped fresh coriander
- 60-80 ml water, as needed
- 10 g Bharwa Achari Masala
Instructions
- 1Make a deep cross slit in the root end of each peeled onion, keeping the opposite end intact so the layers stay together.
- 1Mix roasted gram flour, peanuts, Bharwa Achari Masala, salt, lemon juice, coriander and 10 ml oil into a moist crumbly filling.
- 2Open the onion layers gently and press a little filling into each onion.
- 3Heat the remaining oil in a heavy pan, arrange the onions in one layer and cook covered on low heat for eight minutes.
- 4Turn carefully, add a small splash of water and continue cooking covered for ten to twelve minutes.
- 5Uncover and cook until the onions are tender, lightly caramelised and coated with the remaining filling.
Recipe notes
Choose evenly sized small onions or large shallots so they soften at the same rate without falling apart. Bharwa Achari Masala contributes regular salt and black salt; use the measured seasoning salt below, then adjust only after tasting near the end of cooking.
